PUFA stands for polyunsaturated fatty acids — a type of fat found in many foods. PUFAs (polyunsaturated fatty acids) are fragile fats high in commodity pork from corn/soy feeds—they oxidize easily, losing flavor and nutrition.
They’re not inherently bad. In fact, small amounts are a natural part of a healthy diet.
But here’s where it matters for pork:
